It's pretty obvious why they use red and blue LEDs.
Green light would bounce right off of the plants!

PS LEDs are not like lasers at all. When you read the wavelength, that is only the peak of a curve of all of the wavelengths around the peak. IOW look at an LED with a diffraction grating. You'll see there is a visible amount of orange or even red in a blue LED so you can bet there is a lot of UV too.
